  • 2 lbs chicken wings split into drumettes and flats, patted completely dry
  • 1 tbsp baking powder aluminum-free
  • 1 tsp kosher salt
  • 1/2 tsp black pepper freshly ground
  • avocado oil spray for the basket

Method
 

  1. Ensure the chicken wings are completely dry by patting them with paper towels. Place the dried wings in a large mixing bowl.

  3. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with avocado oil. Arrange the wings in a single layer, ensuring they are not overcrowded. Cook in batches if needed.
  4. Cook for 20-25 minutes, flipping the wings halfway through the cooking time. The wings are ready when they are golden brown, crispy, and the internal temperature reaches 165°F (74°C).

Notes

For extra crispy wings, after seasoning, you can let them rest on a wire rack in the refrigerator for a few hours to dry out the skin even more.
Ensure your baking powder is fresh, as old baking powder will not be as effective.
