- Melt butter in a medium saucepan over medium heat. Add diced apples and cook for 3-5 minutes, stirring occasionally, until they begin to soften.
- Stir in the maple syrup, cinnamon, and nutmeg. Cook for one more minute until the spices are fragrant.
- Add the rolled oats to the pan. Stir continuously for about 1 minute to lightly toast them.
- Pour in the milk or water and the pinch of salt. Bring to a simmer, then reduce heat to low. Cook for 5-7 minutes, stirring occasionally, until the oats are tender and have absorbed most of the liquid.
- Remove the saucepan from the heat and stir in the vanilla extract. Let it stand for a minute to thicken. Serve warm with your favorite toppings.

For a vegan version, use coconut oil instead of butter and a plant-based milk or water.
