Ingredients
  

For the Oatmeal
  • 1 tbsp Unsalted Butter or coconut oil
  • 1 medium Apple peeled, cored, and diced (Honeycrisp or Gala recommended)
  • 1 tbsp Maple Syrup or brown sugar
  • 1 tsp Ground Cinnamon
  • 1/8 tsp Ground Nutmeg
  • 1 cup Old-Fashioned Rolled Oats
  • 2 cups Milk or Water whole milk, almond milk, or oat milk work well
  • 1 pinch Salt
  • 1/2 tsp Vanilla Extract

Method
 

Cooking Instructions
  1. Melt butter in a medium saucepan over medium heat. Add diced apples and cook for 3-5 minutes, stirring occasionally, until they begin to soften.
  2. Stir in the maple syrup, cinnamon, and nutmeg. Cook for one more minute until the spices are fragrant.
  3. Add the rolled oats to the pan. Stir continuously for about 1 minute to lightly toast them.
  4. Pour in the milk or water and the pinch of salt. Bring to a simmer, then reduce heat to low. Cook for 5-7 minutes, stirring occasionally, until the oats are tender and have absorbed most of the liquid.
  5. Remove the saucepan from the heat and stir in the vanilla extract. Let it stand for a minute to thicken. Serve warm with your favorite toppings.

Notes

For a vegan version, use coconut oil instead of butter and a plant-based milk or water.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
