Ingredients
  

For the Oatmeal
  • 1/2 cup rolled oats Use old-fashioned rolled oats for the best texture.
  • 1 cup water You can substitute with unsweetened almond milk for a creamier texture.
  • 1 small sweet apple such as Honeycrisp or Gala, finely diced
  • 2 tbsp unsweetened applesauce Ensure it has no added sugar.
  • 1/2 tsp ground cinnamon
  • 1 pinch salt

Method
 

  1. In a small saucepan, combine the diced apple, water, unsweetened applesauce, cinnamon, and salt. Bring to a simmer over medium heat and cook for 5-7 minutes, until the apples are tender.
  2. Stir the rolled oats into the simmering apple mixture. Reduce heat to low, cover, and cook for 5-7 minutes, stirring occasionally, until the oats are cooked and have absorbed the liquid.
  3. Remove the saucepan from the heat and let it stand, covered, for 2-3 minutes to thicken. Serve warm.

Notes

For a creamier oatmeal, substitute the water with unsweetened almond milk or another milk of your choice.
Add a tablespoon of chopped walnuts or pecans for extra crunch and healthy fats.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave with a splash of water or milk.
