- Melt a tablespoon of butter or coconut oil in a medium saucepan over medium heat. Add the dry steel-cut oats and toast for 2-3 minutes, stirring frequently, until they smell nutty and fragrant.
- Pour in the water and milk, then add the diced apple, cinnamon, and a pinch of salt. Stir everything together and bring the mixture to a low boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for 20-25 minutes. Stir occasionally to prevent sticking. The oats are done when they are tender and have absorbed most of the liquid.
- Remove the saucepan from the heat and let it stand, covered, for 5 minutes. This allows the oatmeal to thicken into a perfectly creamy consistency. Stir in your preferred sweetener and serve immediately.
Notes
For a richer flavor, substitute apple cider for the water.
