Ingredients

  • 2 thick slices sourdough bread or other artisan bread
  • 1 large ripe Hass avocado
  • 2 large eggs
  • 0.5 cup cherry tomatoes halved
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • Flaky sea salt and freshly cracked black pepper to taste
  • Red pepper flakes optional, for garnish

Equipment

  • 1 Skillet
  • 1 Toaster

Method

  1. Toast your bread slices until golden brown and crisp using a toaster, broiler, or skillet.
  2. In a bowl, combine the avocado flesh, lemon juice, salt, and pepper. Gently mash with a fork, leaving some texture.
  3. Heat olive oil in a non-stick skillet over medium heat. Fry the eggs for 2-3 minutes until the whites are set and the yolks are runny.
  4. Spread the mashed avocado on each slice of toast. Top with halved cherry tomatoes and a fried egg.
  5. Sprinkle with flaky sea salt, more black pepper, and optional red pepper flakes. Serve immediately.

Notes

Don't Over-Mash: Keep some texture in your avocado for a more satisfying mouthfeel.
Season Every Layer: Season the avocado, tomatoes, and the egg for a well-balanced flavor.
Use High-Quality Oil: A drizzle of a good extra virgin olive oil over the final dish adds a wonderful peppery note.
