  • 1 cup Granulated Sugar 200g
  • 3/4 cup Dark Cocoa Powder 75g, Dutch-processed
  • 2 large Eggs Room temperature
  • 1 tsp Vanilla Extract 5ml
  • 3/4 cup All-Purpose Flour 95g
  • 1/2 tsp Sea Salt 3g
  • 2 medium Ripe Bananas Approx 200g, mashed for swirling

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper, leaving an overhang for easy removal.
  2. Whisk melted butter and cocoa powder together until smooth. This ensures a deep, dark cocoa color.
  3. In a separate bowl, beat eggs and sugar for 3-5 minutes until pale and thick to create the crackle crust.
  4. Fold the chocolate mixture into the eggs. Gently stir in the flour, vanilla, and salt until just combined.
  5. Pour batter into pan. Spoon mashed banana on top and use a knife to create golden-brown swirls.
  6. Bake for 25-30 minutes until the top is shiny and the center is slightly set. Look for moisture droplets on the sides when cut.

Notes

Use very ripe bananas for the best flavor.
Chill before cutting to ensure clean square edges.
