Ingredients
  

  • 5.2 oz Boursin Garlic & Fine Herbs cheese One block
  • 2 pints cherry tomatoes
  • 5 cloves garlic peeled
  • 1/4 cup olive oil plus more for drizzling
  • 1 lb orzo pasta
  • 1/2 cup parmesan cheese freshly grated
  • 1/4 cup fresh basil chopped
  • 1/2 tsp red pepper flakes optional
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Place the Boursin cheese in the center of a 9x13 inch baking dish. Scatter the cherry tomatoes and whole garlic cloves around the cheese.
  2. Drizzle everything with olive oil. Season generously with salt, black pepper, and red pepper flakes. Bake for 25-30 minutes, until the tomatoes are blistered and the Boursin is soft.
  3. While the cheese bakes, cook the orzo in a large pot of salted boiling water according to package directions until al dente. Reserve 1 cup of the pasta water before draining.
  4. Remove the baking dish from the oven. Mash the roasted garlic cloves with a fork and burst the tomatoes. Stir the melted Boursin and tomato juices together to form a creamy sauce.
  5. Add the drained orzo and grated Parmesan to the baking dish. Pour in 1/2 cup of the reserved pasta water and stir vigorously until a creamy sauce forms and coats the pasta. Add more pasta water if needed. Garnish with fresh basil and serve immediately.

Pasta Water is Key: Don't skip reserving the pasta water. It's essential for creating the perfectly creamy sauce.
