Preparation Steps
  1. In a clear glass mason jar, briefly toss together the old-fashioned rolled oats, chia seeds, and kosher salt so the chia seeds are evenly distributed.
  2. Pour in the whole milk and pure vanilla extract. Stir the mixture thoroughly with a wooden spoon, ensuring no dry pockets remain at the bottom.
  3. Let the jar sit at room temperature for 5 minutes. Give it one final, vigorous stir to prevent the swelling chia seeds from clumping.
  4. Seal the jar tightly and place it in the refrigerator for at least 4 hours, or overnight, until a thick, creamy mixture forms.
  5. Right before eating, remove the lid and generously garnish the creamy oat surface with the moist dark brown sugar crystals and a light dusting of brown ground cinnamon powder.

Notes

Tip 1: Do not add the brown sugar before refrigerating, or it will dissolve completely.
Tip 2: Avoid quick oats, as they will turn to mush during the long cold hydration process.
