- Pat the pork chops completely dry with a paper towel. Season both sides generously with salt and black pepper.
- In a small bowl, whisk together the packed brown sugar, low-sodium soy sauce, and minced garlic until the sugar is mostly dissolved. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the seasoned pork chops. Cook for 4-5 minutes per side, until golden brown and a meat thermometer reads 145°F.
- Remove the pork chops from the skillet and set aside. Reduce heat to medium-low. Add the butter to the skillet. Once melted, pour in the brown sugar mixture and cook, stirring constantly, for 1-2 minutes until it thickens.
- Return the pork chops to the skillet. Spoon the glaze over the pork chops, turning to coat. Serve immediately.
