Ingredients

  • 4 boneless pork chops, 1-inch thick about 6 oz each
  • 1/2 cup light brown sugar, packed
  • 1/4 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Equipment

  • 1 Large Skillet
  • 1 Meat Thermometer
  • 1 Small Bowl

Method

  1. Pat the pork chops completely dry with a paper towel. Season both sides generously with salt and black pepper.
  2. In a small bowl, whisk together the packed brown sugar, low-sodium soy sauce, and minced garlic until the sugar is mostly dissolved. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the seasoned pork chops. Cook for 4-5 minutes per side, until golden brown and a meat thermometer reads 145°F.
  4. Remove the pork chops from the skillet and set aside. Reduce heat to medium-low. Add the butter to the skillet. Once melted, pour in the brown sugar mixture and cook, stirring constantly, for 1-2 minutes until it thickens.
  5. Return the pork chops to the skillet. Spoon the glaze over the pork chops, turning to coat. Serve immediately.

Notes

Tip 1: Do not overcrowd the pan when searing the pork chops. Cook in batches if necessary to ensure a good crust.
Tip 2: Watch the glaze carefully as it can burn quickly due to the sugar content.
Tip 3: For an extra layer of flavor, add 1/4 teaspoon of red pepper flakes to the glaze mixture.
