Main Ingredients
  • 2 slices thick-cut sourdough bread 1-inch thick
  • 2 tbsp salted butter 30g, softened
  • 1/2 cup sharp cheddar cheese 60g, shredded
  • 1/2 cup Monterey Jack cheese 60g, shredded
  • 1 cup shredded chicken breast 150g, cooked
  • 3 tbsp buffalo wing sauce 45ml, glossy and vibrant orange
  • 1 tbsp fresh scallions 5g, finely chopped

Equipment

  • 1 Cast Iron Skillet Or a heavy-bottomed non-stick pan.
  • 1 Stainless Steel Spatula Wide enough to support the sourdough slices.
  • 1 Mixing Bowl For tossing the shredded chicken in sauce.

Method
 

Prep the Filling
  1. In a small bowl, toss the shredded chicken breast with the glossy buffalo sauce until evenly coated and vibrant orange.
  2. Place sourdough slices on a board. Spread half of the cheddar and Monterey Jack on each slice.
  3. Top one slice with the buffalo chicken and chopped scallions. Close the sandwich.
Toast the Sandwich
  1. Spread softened salted butter on the exterior of the sourdough bread.
  2. Place in a skillet over medium-low heat. Cook for 3-4 minutes until golden-brown with char marks.
  3. Flip the sandwich and cook for another 3-4 minutes until the cheese is melted and stringy.

Notes

Use medium-low heat to ensure the thick sourdough toasts evenly without burning.
Always shred your own cheese for the best melt and longest cheese pull.
