Preparation
- Combine buttermilk and salt in a large bag. Add chicken and refrigerate for 12-24 hours.
- Remove chicken from brine and pat extremely dry with paper towels. Let sit at room temp for 30 mins.
Roasting
- Truss the bird with twine. Rub with oil and coat with pepper and dried herbs.
- Place chicken in cast iron skillet with lemons and garlic. Roast at 425°F (220°C) for 45 minutes.
- Add fresh rosemary and thyme to the pan drippings. Roast for another 10-15 minutes until internal temp is 165°F (74°C).
Notes
Ensure the chicken is patted completely dry after the brine; moisture is the enemy of crispy skin.
