Ingredients

Main Ingredients
  • 1 medium green cabbage About 2 lbs (900g), roughly chopped.
  • 1 lb ground beef 80/20 blend, browned and crumbled.
  • 2 cups yellow cheddar cheese Freshly grated (about 226g).
  • 2 tbsp fresh green parsley Finely chopped.
  • 1 tbsp olive oil For cooking.
  • 1 medium yellow onion Finely diced.
  • 3 cloves garlic Minced.
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.25 cup beef broth For deglazing.

Equipment

  • 1 Rustic Ceramic Baking Dish 9x13 inch recommended.
  • 1 Large Heavy-Bottomed Skillet For searing beef and softening cabbage.
  • 1 Box Grater For freshly grating the cheddar cheese.

Method

Casserole Preparation
  1. Preheat oven to 400°F (200°C). Heat olive oil in a skillet. Add ground beef, browning for 6-8 minutes until crumbly. Stir in onion, garlic, salt, pepper, and smoked paprika. Cook 3 minutes, then remove beef mixture, leaving fat in pan.
  2. Add chopped green cabbage to the skillet. Pour in beef broth to deglaze. Cover and cook for 5-7 minutes until cabbage is tender and liquid evaporates.
  3. Spread the tender cooked chopped green cabbage evenly into a greased rustic ceramic baking dish. Layer the browned crumbly ground beef evenly on top.
  4. Blanket the beef with a thick layer of freshly grated yellow cheddar cheese. Bake for 12-15 minutes until cheese is melted, bubbly, and edges are beautifully charred and golden-brown.
  5. Let rest for 5 minutes. Garnish with finely chopped fresh green parsley before serving.

Notes

Cook Out the Moisture: Ensure the beef broth completely evaporates when cooking the cabbage.
Grate Your Own Cheese: Always use a block of yellow cheddar to achieve charred golden-brown edges.
Don't Mix the Layers: Keep the tender cabbage on the bottom and the crumbly beef on top.
