Ingredients

Main Ingredients
  • 1 lb ground beef 80/20 fat ratio (450g)
  • 8 oz sharp cheddar cheese shredded (225g)
  • 2 tbsp fresh parsley finely chopped (8g)
  • 1/2 tsp cracked black pepper (3g)
  • 1 tsp salt (6g)
  • 4 slices thick-cut sourdough bread
  • 2 tbsp unsalted butter room temperature (30g)

Equipment

  • 1 Cast Iron Skillet Ensures a perfect sear.
  • 1 Metal Spatula Used for pressing the sandwich.

Method

Beef Filling Preparation
  1. Heat a skillet over medium-high heat with a dash of oil. Add the ground beef and cook undisturbed for 3-4 minutes until a deep brown crust forms. Break into crumbles.
  2. Stir in the salt, cracked black pepper, and fresh parsley. Remove from heat and drain excess fat.
Sandwich Assembly
  1. Butter one side of each sourdough slice. Place one slice butter-side down in the skillet. Layer cheese, beef, and more cheese.
  2. Top with the second slice of bread (butter-side up). Grill for 3-4 minutes per side until the bread is golden brown and the cheese is oozing.

Notes

Use a heavy skillet for the best sear.
Always shred your own cheese for the best melt pulls.
