Main Ingredients
  • 1 loaf French bread approx. 16oz (450g)
  • 4 tbsp unsalted butter softened
  • 3 cloves garlic minced
  • 1 lb chicken breast diced into 1-inch chunks
  • 1 tbsp olive oil for searing
  • 1 cup heavy cream 240ml
  • 1/2 cup Parmesan cheese 50g, freshly grated
  • 2 cups mozzarella cheese 225g, shredded
  • 1/4 cup fresh parsley finely chopped

Equipment

  • 1 Cast Iron Skillet For searing the chicken
  • 1 Rimmed Baking Sheet For toasting the bread
  • 1 Small saucepan For the Alfredo sauce

Method
 

Preparation
  1. Season chicken chunks with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add chicken and sear until a deep golden-brown crust forms, about 6-7 minutes total. Remove and set aside.
  2. In a saucepan, melt 1 tbsp butter and sauté 1 clove of garlic. Add heavy cream and simmer. Whisk in Parmesan until the sauce is velvety and thick.
  3. Slice French bread lengthwise. Spread with garlic butter. Bake at 400°F (200°C) for 5-7 minutes until golden.
  4. Spread Alfredo sauce over bread, top with chicken and mozzarella. Broil for 2-4 minutes until cheese has golden toasted spots. Garnish with chopped parsley.

Notes

Use freshly grated Parmesan for the smoothest sauce.
Pre-toasting the bread prevents it from getting soggy under the sauce.
