Ingredients
  

For the Chicken Filling
  • 4 cups cooked chicken cubed or shredded (rotisserie chicken works well)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
For the Stuffing Topping
  • 1 box (6 oz) stuffing mix such as Stove Top
  • 1/2 cup chicken broth
  • 4 tbsp unsalted butter melted

Method
 

  1. Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, frozen mixed vegetables, onion powder, garlic powder, salt, and pepper. Stir until well combined.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In a separate medium bowl, toss the dry stuffing mix with the melted butter and chicken broth until just moistened.
  5. Sprinkle the stuffing mixture evenly over the top of the chicken filling.
  6. Bake for 25-30 minutes, until the filling is hot and bubbly and the topping is golden brown.
  7. Let the casserole rest for 5-10 minutes before serving to allow it to set.
