Chicken Gyro Bowls with Golden Charred Chicken and Creamy Tzatziki

  • 1.5 lbs Chicken Breast 680g, cut into bite-sized pieces
  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 1 tbsp Dried Oregano 3g
  • 1 tsp Dried Dill 1g
  • 1.5 cups Long-Grain White Rice 300g
  • 3 cups Chicken Broth 710ml
  • 1 cup Cherry Tomatoes 150g, halved
  • 1 large English Cucumber 300g, sliced into half-moons
  • 1/2 cup Red Onion thinly sliced slivers
  • 1/2 cup Kalamata Olives 65g, sliced
  • 1/2 cup Feta Cheese 75g, crumbled
  • 1 cup Tzatziki Sauce 240ml, thick style
  • 2 pieces Pita Bread cut into wedges and toasted

Equipment

  • 1 Cast Iron Skillet For achieving the perfect charred sear on the chicken.
  • 1 Heavy-Lidded Saucepan To ensure the rice steams perfectly without losing moisture.

Method
 

Preparation
  1. Toss the chicken pieces with olive oil, oregano, 1 tsp dill, salt, and pepper. Let sit for at least 10 minutes.
  2. Combine rinsed rice and chicken broth in a pot. Bring to a boil, then simmer covered for 15-18 minutes until tender and fluffy.
Cooking and Assembly
  1. Heat a skillet over medium-high. Add chicken and cook for 4-5 minutes per side until charred golden-brown edges appear.
  2. Layer fluffy rice in bowls. Arrange chicken, tomatoes, cucumbers, onions, and olives in distinct sections. Add a center dollop of tzatziki, garnish with dried dill and feta, and tuck in pita wedges.

Notes

Use a cast iron skillet for the best char on the chicken.
Rinse your rice thoroughly to ensure it stays fluffy and individual grains don't stick.
