  • 1 lb (454g) ground chicken mix of white and dark meat
  • 1/2 cup (120ml) hoisin sauce dark and thick
  • 8 oz (225g) water chestnuts diced into small squares
  • 1 tbsp (15g) ginger freshly minced
  • 3 cloves garlic minced
  • 1 tbsp (15ml) neutral oil for searing
  • 1 tbsp (15ml) soy sauce low sodium preferred
  • 2 heads butter lettuce washed and leaves separated
  • 3 stalks green onions thinly sliced
  • 1/2 tsp red pepper flakes to taste

  • 1 Large Skillet Heavy-bottomed or non-stick
  • 1 Chef's Knife For fine dicing

Method
 

Prepare Filling
  1. Heat oil in a large skillet over medium-high heat. Add minced ginger and garlic, sautéing for 30 seconds until fragrant.
  2. Add ground chicken, breaking it into small crumbles. Cook undisturbed for 3 minutes to develop a deep savory brown sear, then stir until cooked through.
  3. Stir in hoisin sauce, soy sauce, and diced water chestnuts. Cook for 2 minutes until the sauce is thick and glossy.
  4. Spoon the hot chicken mixture into butter lettuce leaves. Garnish with scallions and red pepper flakes.

Notes

Dry the lettuce leaves thoroughly to ensure they stay crisp.
Use high heat for the chicken to get that restaurant-style caramelized color.
