Chicken Ramen Garlic Sauce with Crispy Pan-Seared Chicken

Ingredients
  

Main Protein
  • 1 lb (450g) chicken breast boneless, skinless, sliced into strips
  • 2 tbsp (30ml) avocado oil or high-smoke point oil
  • 1 tsp (5g) kosher salt
  • 1 tsp (5g) black pepper
Noodles & Sauce
  • 10 oz (280g) wavy ramen noodles dried or fresh
  • 6 cloves garlic finely minced
  • 3 tbsp (45g) unsalted butter
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60ml) chicken stock
Garnish
  • 3 stalks scallions finely chopped
  • 1 tbsp (9g) white sesame seeds toasted
  • 1 tbsp (9g) black sesame seeds toasted
  • 1 tsp (2g) dried red chili flakes

Equipment

  • 1 Heavy-Bottomed Skillet Cast iron or stainless steel preferred for the best sear.
  • 1 Large pot For boiling the ramen noodles.
  • 2 Deep ceramic bowls To allow the sauce to pool beautifully.

Method
 

Chicken Preparation
  1. Season chicken strips with salt and pepper. Heat oil in skillet over medium-high heat. Sear chicken for 5 minutes per side until a deep golden-brown crust forms. Remove and set aside.
Noodle & Sauce Construction
  1. Cook wavy ramen in salted boiling water for 1 minute less than package instructions. Drain, reserving 1/4 cup of pasta water.
  2. In the same skillet, melt butter and sauté garlic for 2 minutes. Whisk in chicken stock and heavy cream. Simmer until the sauce is thick and pale-gold.
  3. Add noodles to the sauce, tossing to coat. Add reserved water if needed to reach a glossy consistency.
Final Assembly
  1. Divide noodles into deep bowls. Top with chicken slices. Garnish heavily with scallions, both sesame seeds, and chili flakes.

Notes

For a darker sear, ensure the chicken is patted completely dry before seasoning.
Use fresh garlic rather than bottled for the most vibrant flavor profile.
