Preparation and Baking
- Preheat oven to 400°F (200°C). In a large bowl, gently combine ground chicken, ricotta, panko, egg, half the parmesan, parsley, and salt until herb flecks are distributed.
- Roll mixture into 1.5-inch balls and place on a greased baking sheet. Bake for 18-20 minutes until golden-brown and firm.
Saucing and Serving
- Heat marinara in a skillet. Add baked meatballs and simmer for 5 minutes until coated in thick sauce.
- Serve in a shallow bowl, topping with remaining parmesan and fresh parsley.
