Prepare the Spiced Chicken
- In a bowl, toss shredded chicken with smoked paprika, guajillo chili powder, and salt until it reaches a vibrant reddish-orange hue.
- Heat oil in a cast-iron skillet over medium-high heat. Add chicken and sear until visible charred edges form and meat is juicy.
Assemble the Sandwich
- Toast sliced telera bread in the skillet until crusty golden-brown. Spread a thick layer of matte-textured brown refried beans on the bottom half.
- Pile hot chicken onto the beans and top with Oaxaca cheese. Cover briefly to ensure the cheese is gooey and melted.
- Add fan-spread avocado, translucent jalapeño rounds, shredded lettuce, and a thin drizzle of white Mexican crema before placing the top bun.
Notes
Use a lid on your skillet to help the Oaxaca cheese melt faster without burning the bread.
If you can't find telera rolls, a bolillo or a soft French baguette is a suitable substitute.
