  • 3 lb Pork Loin Roast Boneless (1.36kg)
  • 12 oz Coca-Cola Original full-sugar (355ml)
  • 1/4 cup Balsamic Vinegar 60ml
  • 2 tbsp Dijon Mustard 30g
  • 1 tsp Garlic Powder 5g
  • 1 tsp Onion Powder 5g
  • 2 tbsp Unsalted Butter 28g

  • 1 Cast Iron Skillet Or a heavy-bottomed roasting pan
  • 1 Digital Meat Thermometer Essential for reaching 145°F

Method
 

Preparation and Searing
  1. Pat the pork loin dry and season with salt, pepper, garlic powder, and onion powder.
  2. In a hot skillet with oil, sear all sides of the pork for 3-4 minutes until a deep caramelized brown crust forms.
Glazing and Roasting
  1. Remove pork, deglaze the pan with Coca-Cola and balsamic vinegar. Whisk in mustard and reduce by half.
  2. Return pork to pan, baste, and roast at 375°F (190°C) until internal temperature reaches 145°F (63°C).

Notes

Always use regular Coca-Cola, not diet, for proper caramelization.
Let the meat rest for 10 minutes before slicing to keep it juicy.
