Ingredients
  

Main Ingredients
  • 1 cup unsalted butter softened to room temperature (225g)
  • 3/4 cup granulated sugar 150g
  • 3/4 cup light brown sugar packed (150g)
  • 1 large egg room temperature
  • 1 tbsp vanilla extract 15ml
  • 2 cups all-purpose flour 250g
  • 1 tsp baking soda 5g
  • 1/2 tsp sea salt 3g
  • 3 cups cornflake cereal divided; 120g total
  • 1 cup toffee bits such as Heath or Skor (150g)

Equipment

  • 1 Stand mixer or hand mixer Fitted with a paddle attachment.
  • 1 Large Cookie Scoop 3-tablespoon capacity for uniform baking.
  • 2 Baking sheets Heavy-gauge aluminum preferred.
  • 1 Parchment Paper To prevent toffee from sticking.

Method
 

Dough Preparation
  1. In a stand mixer, cream the softened butter, white sugar, and brown sugar on medium-high for 3-4 minutes until pale and fluffy.
  2. Beat in the egg and vanilla extract for 1 minute until well combined and smooth.
  3. Whisk flour, baking soda, and salt together. Add to the wet ingredients on low speed, mixing until just combined.
Folding and Chilling
  1. Gently fold in the toffee bits and 2 cups of the cornflakes by hand, crushing some cereal while leaving others whole for a rugged texture.
  2. Scoop 3-tablespoon sized balls and press the remaining 1 cup of cornflakes into the surface. Chill for 30 minutes.
Baking
  1. Preheat oven to 350°F (175°C). Bake for 10-12 minutes until edges are dark golden-brown and caramelized but centers are still matte.
  2. Cool on the baking sheet for 5 minutes to let the toffee set before moving to a wire rack.

Notes

Use room temperature eggs and butter for a perfect emulsion.
Chill the dough to ensure the cookies stay thick and don't spread too thin.
