Dough Preparation
- In a stand mixer, cream the softened butter, white sugar, and brown sugar on medium-high for 3-4 minutes until pale and fluffy.
- Beat in the egg and vanilla extract for 1 minute until well combined and smooth.
- Whisk flour, baking soda, and salt together. Add to the wet ingredients on low speed, mixing until just combined.
Folding and Chilling
- Gently fold in the toffee bits and 2 cups of the cornflakes by hand, crushing some cereal while leaving others whole for a rugged texture.
- Scoop 3-tablespoon sized balls and press the remaining 1 cup of cornflakes into the surface. Chill for 30 minutes.
Baking
- Preheat oven to 350°F (175°C). Bake for 10-12 minutes until edges are dark golden-brown and caramelized but centers are still matte.
- Cool on the baking sheet for 5 minutes to let the toffee set before moving to a wire rack.

Use room temperature eggs and butter for a perfect emulsion.
