Ingredients

  • 1 cup Full-Fat Cottage Cheese Small curd works best
  • 1/2 cup Almond Flour Fine, blanched almond flour
  • 1/4 cup Grated Parmesan Cheese
  • 1 Large Egg
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Salt

Equipment

  • 1 Baking Sheet
  • 2 Parchment Paper
  • 1 Rolling Pin

Method

  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper. In a medium-sized bowl, combine the cottage cheese, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, and salt. Mix until a thick, uniform dough forms.
  2. Transfer the dough to the parchment-lined baking sheet. Place a second sheet of parchment paper on top and use a rolling pin to roll the dough out to about 1/8-inch thickness.
  3. Remove the top parchment paper. Use a pizza cutter or knife to score the dough into 1.5-inch squares. Bake for 15-20 minutes, until the edges are golden brown.
  4. Remove from the oven and break the crackers apart along the score lines. Spread them in a single layer on the baking sheet. Return to the oven for another 5-10 minutes, or until deeply golden and crispy.
  5. Let the crackers cool completely on a wire rack before serving or storing in an airtight container.

Notes

For the crispiest crackers, ensure you roll the dough as thinly and evenly as possible.
Store cooled crackers in an airtight container at room temperature for up to 5 days.
