Ingredients
  

  • 1 cup full-fat cottage cheese 2% also works well.
  • 2 large eggs
  • 1 cup rolled oats Use old-fashioned, not quick oats.
  • 2 tsp baking powder
  • 2 tbsp maple syrup Can substitute with honey or other sweeteners.
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Method
 

  1. Combine cottage cheese, eggs, rolled oats, baking powder, maple syrup, vanilla extract, and salt in a blender. Blend on high for 30-60 seconds until the batter is completely smooth.
  2. Preheat your waffle iron. Once hot, lightly grease it with non-stick spray or butter.
  3. Pour the batter onto the hot waffle iron, close the lid, and cook for 4-6 minutes, or until golden brown and crispy.
  4. Carefully remove the waffle and serve immediately with your favorite toppings. Repeat with the remaining batter.
