  • 15 oz can black-eyed peas rinsed and drained
  • 15 oz can black beans rinsed and drained
  • 15 oz can sweet corn drained
  • 1 red bell pepper finely diced
  • 1 green bell pepper finely diced
  • 1/2 cup red onion finely diced
  • 1 jalapeño seeds and membrane removed, finely minced
  • 1 large avocado diced, added just before serving
  • 1/2 cup fresh cilantro chopped
For the Zesty Dressing
  • 1/3 cup extra virgin olive oil
  • 1/4 cup lime juice freshly squeezed
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

Method
 

  1. Prepare the Dressing: In a small bowl or jar, whisk together the olive oil, fresh lime juice, apple cider vinegar, honey, minced garlic, chili powder, cumin, salt, and pepper. Set it aside to let the flavors meld.
  2. Combine the Base Ingredients: In a large mixing bowl, combine the rinsed and drained black-eyed peas and black beans, corn, diced red and green bell peppers, red onion, and jalapeño.
  3. Toss Everything Together: Pour the prepared dressing over the bean and vegetable mixture. Gently toss until everything is evenly coated.
  4. Chill and Marinate: For the best flavor, cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours. This allows the ingredients to absorb the delicious dressing.
  5. Add Final Touches: Just before serving, gently fold in the diced avocado and chopped fresh cilantro. Give it one last taste and adjust seasoning if needed.
