  • 1/2 cup Balsamic Vinegar Aged quality preferred
  • 3/4 cup Extra Virgin Olive Oil Fresh and peppery
  • 1 tbsp Creamy Dijon Mustard Acts as emulsifier
  • 1 tbsp Honey Or maple syrup
  • 1/2 tsp Dried Oregano Flakes
  • 1/2 tsp Cracked Black Pepper Coarsely ground
  • 1/2 tsp Coarse Sea Salt
  • 1 clove Garlic Whole, peeled
  • 1 sprig Fresh Thyme For infusion

Equipment

  • 1 Glass Jar with Lid For shaking and storage
  • 1 Small Whisk Optional, for bowl mixing

Method
 

Combine and Shake
  1. Add balsamic vinegar, honey, and Dijon mustard to a clear glass jar. Stir or whisk until the honey is dissolved.
  2. Add the dried oregano, cracked black pepper, sea salt, whole garlic clove, and thyme sprig to the jar.
  3. Pour in the olive oil. Seal the lid tightly and shake vigorously for 30-45 seconds until the mixture is a thick, uniform chocolate brown color.

Notes

Ensure all ingredients are room temperature for the best emulsion.
Remove the garlic clove after 3 days to prevent the flavor from becoming overpowering.
