Creamy Cajun Chicken and Rice with Fluffy Garlic Rice

Ingredients
  

Main Ingredients
  • 1.5 lbs Chicken Breasts Sliced into strips
  • 2 tbsp Cajun Seasoning Divided use
  • 2 tbsp Olive Oil
  • 1.5 cups (285g) Long-Grain White Rice Rinsed
  • 3 cups (710ml) Chicken Broth
  • 4 cloves Garlic Minced
  • 2 tbsp (30g) Butter Unsalted
  • 1.5 cups (355ml) Heavy Cream
  • 1 tsp Tomato Paste For color and depth
  • 1/4 cup Fresh Parsley Chopped for garnish
  • 1 pinch Red Pepper Flakes To taste

Equipment

  • 1 Heavy-Bottomed Skillet Cast iron or stainless steel preferred for searing.
  • 1 Medium Saucepan With tight-fitting lid for rice.

Method
 

Prepare the Garlic Rice
  1. Melt butter in a saucepan over medium heat. Sauté minced garlic until golden and fragrant.
  2. Add rinsed rice and chicken broth. Bring to a boil, then cover and simmer on low for 15-18 minutes until fluffy.
Sear the Chicken
  1. Coat chicken strips heavily in Cajun seasoning.
  2. Heat oil in a skillet and sear chicken for 4-5 minutes per side until a deep golden-brown crust forms. Remove and set aside.
Make the Sauce and Assemble
  1. In the same skillet, whisk heavy cream, broth, tomato paste, and remaining spices. Simmer until thick and velvety.
  2. Return chicken to the pan to coat in the vibrant orange-red sauce. Serve over the garlic rice with parsley and red pepper flakes.

Notes

Use room temperature cream to prevent the sauce from breaking.
Don't skip rinsing the rice to ensure the grains remain separate and fluffy.
