Ingredients

Recipe Ingredients
  • 1 lb (454g) Chicken Breast Boneless, skinless, sliced into medallions
  • 2 packs (300g) Wavy Ramen Noodles Fresh or high-quality dried
  • 6 cloves Garlic Minced
  • 4 cups (950ml) Chicken Broth Low-sodium
  • 1/2 cup (120ml) Heavy Cream For the opaque sauce
  • 2 tbsp (30ml) Neutral Oil Grapeseed or Canola
  • 2 heads Baby Bok Choy Halved lengthwise
  • 2 large Eggs Room temperature
  • 1 tsp Red Chili Flakes Garnish
  • 1 tsp Black Sesame Seeds Garnish
  • 2 stalks Green Scallions Finely chopped

Equipment

  • 1 Cast Iron Skillet For searing chicken
  • 1 Medium Saucepan For boiling eggs and noodles
  • 2 Matte Black Ceramic Bowl For serving

Method

Prepare the Jammy Eggs
  1. Bring water to a boil, lower eggs gently, and cook for 6 minutes and 30 seconds.
  2. Transfer eggs immediately to an ice bath for 5 minutes before peeling and slicing.
Cook Chicken and Veggies
  1. Season chicken and sear in oil over medium-high heat until edges are golden-brown (about 4 mins per side). Set aside.
  2. Steam baby bok choy for 3 minutes until bright green and tender-crisp.
Construct the Garlic Broth
  1. In the same skillet, sauté minced garlic for 45 seconds until fragrant.
  2. Add chicken broth and heavy cream. Simmer for 5 minutes until dense and opaque.
Assemble
  1. Boil ramen noodles, drain, and place in a matte black bowl.
  2. Pour broth over noodles. Top with chicken, egg halves, bok choy, chili flakes, sesame seeds, and scallions.

Notes

Use room temperature eggs to prevent shells from cracking in boiling water.
Wavy noodles are better for creamy sauces than straight noodles as they hold more liquid.
