Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to ensure the lacy edges release easily.
  2. Place 1 tablespoon (15g) mounds of cottage cheese onto the parchment, spacing them 3 inches (7.5cm) apart. Flatten each into a thin circular disc using the back of a spoon.
Baking
  1. Sprinkle the dried oregano, red pepper flakes, garlic powder, and salt over the discs. Bake for 20-30 minutes.
  2. Watch for the edges to turn a dark brown, lacy texture while the centers become vibrant golden-yellow and bubbly. The sizzle should mostly subside.
Finishing
  1. Remove from the oven and let rest on the tray for 5 minutes until brittle. Transfer to a cooling rack to finish crisping.

Notes

Ensure you use parchment paper, not wax paper, to avoid sticking.
Wait for the chips to cool completely for the best 'snap' texture.
