  • 1.5 lbs lean ground beef 85/15 recommended
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 2 lbs Yukon Gold potatoes peeled and cut into 1-inch cubes
  • 1.5 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 can (15 oz) diced tomatoes undrained
  • 1 tsp dried oregano
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 2 cups shredded sharp cheddar cheese

  • 1 Slow Cooker 6-quart or larger
  • 1 Skillet

Method
 

  1. In a large skillet, cook the ground beef with the diced onion over medium-high heat until the beef is no longer pink. Drain off any excess grease. Stir in the minced garlic and cook for another minute until fragrant.
  2. Spread the diced potatoes evenly across the bottom of your crockpot. Top with the browned ground beef mixture.
  3. In a separate bowl, whisk together the beef broth, Worcestershire sauce, diced tomatoes, oregano, salt, and pepper.
  4. Pour the sauce mixture evenly over the beef and potatoes in the crockpot. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are fork-tender.
  5. Sprinkle the shredded cheddar cheese over the top during the last 15 minutes of cooking. Cover again and cook until the cheese is melted and bubbly. Serve hot.

Notes

Tip 1: For extra flavor, you can add a bay leaf to the crockpot at the beginning and remove it before serving.
Tip 2: Ensure potatoes are fully submerged in the liquid to cook evenly and prevent them from drying out.
