Bake the Layers
- Sift together flour, sugar, cocoa, baking soda, baking powder, and salt in a large bowl.
- Add eggs, buttermilk, oil, and vanilla. Beat on medium for 2 minutes. Stir in hot coffee/water by hand until smooth.
- Divide batter into three 8-inch pans. Bake at 350°F (175°C) for 30-35 minutes until a toothpick comes out with moist crumbs.
Ganache and Assembly
- Pour simmering heavy cream over chopped chocolate. Let sit for 5 minutes, then whisk until glossy and ebony.
- Layer cakes with ganache. Pour remaining ganache over the top, allowing it to drip slowly down the sides.
- Use an off-set spatula to create craggy peaks on top. Garnish with flaky sea salt and dark chocolate shavings.
Notes
Use Dutch-processed cocoa for the darkest color.
