Date Snickers Bars with Creamy Peanut Butter and Dark Chocolate

  • 12 large Medjool dates Pitted
  • 1/4 cup (65g) creamy peanut butter Smooth and drippy
  • 2 tbsp (20g) roasted peanuts Finely chopped
  • 1/2 cup (90g) dark chocolate chips 70% cocoa recommended
  • 1 tsp (5ml) coconut oil For a matte finish
  • 1 tsp (5g) flaky sea salt Maldon or similar

Equipment

  • 1 Paring Knife For pitting dates
  • 1 Piping Bag Or zip-top bag for PB swirl
  • 1 Parchment Paper To prevent sticking

Method
 

Preparation
  1. Slice each Medjool date lengthwise and remove the pit. Open the date slightly to create a pocket for the filling.
  2. Using a small spoon or piping bag, add a thick swirl of creamy peanut butter into the center of each date.
  3. Press the chopped roasted peanuts firmly into the peanut butter swirl.
  4. Combine dark chocolate and coconut oil in a microwave-safe bowl. Heat in 30-second intervals until smooth and glossy.
  5. Heavily drizzle the melted chocolate over the dates. While wet, sprinkle with flaky sea salt.
  6. Refrigerate for 20 minutes until the chocolate sets to a matte finish.

Notes

Use soft Medjool dates for the best caramel-like texture.
Store in the freezer for an extra snappy chocolate coating.
