Ingredients
  

Quesadilla Components
  • 4-6 large flour tortillas 10-inch size
  • 2 cups (300g) shredded chicken cooked and seasoned
  • 1.5 cups (170g) sharp cheddar cheese freshly shredded
  • 1.5 cups (170g) Monterey Jack cheese freshly shredded
  • 2 tbsp (30ml) neutral oil avocado or vegetable oil
  • 1/2 cup (15g) fresh cilantro finely chopped
  • 1/2 cup (120ml) sour cream for dipping

Equipment

  • 1 Cast Iron Skillet Essential for creating charred spots.
  • 1 Pizza Cutter For clean triangular slices.

Method
 

Preparation
  1. Mix shredded chicken with cumin, chili powder, and garlic powder in a bowl until evenly coated.
  2. Layer cheese, seasoned chicken, and more cheese onto half of each flour tortilla.
Cooking
  1. Heat oil in a skillet over medium-high heat. Place folded tortilla in the pan and press down with a spatula.
  2. Cook for 2-3 minutes until dark charred spots appear. Flip and repeat until cheese is molten and both sides are golden brown.

Notes

Use a heavy-bottomed pan for the best char.
Rest for 60 seconds before slicing to keep the cheese inside.
