  • 4 pieces Thick Round Pita Bread Pocketless variety preferred
  • 1 lb (450g) Boneless Skinless Chicken Breast Cut into 1-inch chunks
  • 2 tbsp (30ml) Olive Oil For searing
  • 1 cup (240ml) Tzatziki Sauce Creamy with herb flecks
  • 1/2 cup (75g) English Cucumber Quartered and sliced
  • 1/2 cup (75g) Cherry Tomatoes Halved
  • 1/4 cup (40g) Red Onion Thinly sliced rings
  • 1/4 cup (40g) Kalamata Olives Sliced and pitted
  • 1/2 cup (75g) Feta Cheese Crumbled into large chunks
  • 4 sprigs Fresh Dill For garnish

Equipment

  • 1 Cast Iron Skillet Used for searing chicken to get charred edges.
  • 1 Chef's Knife For precision vegetable slicing.

Method
 

Cooking and Assembly
  1. Heat oil in a skillet over medium-high heat. Season chicken chunks and sear for 3-4 minutes per side until golden-brown charred edges appear and chicken is cooked through.
  2. Warm the pita bread in a dry pan or over a gas flame until soft and slightly toasted on both sides.
  3. Spread a thick layer of tzatziki over the warm pita. Top with the seared chicken chunks.
  4. Add the cucumbers, tomatoes, red onion rings, and olives. Finish with large crumbles of feta and fresh dill sprigs.

Notes

Pat the chicken dry before cooking to ensure a professional sear.
Soak onion rings in ice water to remove their harsh bite.
