- Heat 1/2 tbsp oil in a cast iron skillet over medium-high heat. Add sliced mushrooms in a single layer and cook undisturbed for 4 minutes until golden-brown. Stir and cook 2 more minutes, then remove from pan.
- Add remaining oil and ground turkey to the skillet. Let it sear undisturbed for 5 minutes until visible seared edges form. Break into crumbles and cook until thoroughly browned.
- Add garlic and red pepper flakes, sautéing for 60 seconds. Pour in broth and scrape up browned bits. Stir in mushrooms and spinach, tossing until spinach is wilted and a light glisten forms.

Use a heavy skillet to ensure the turkey sears rather than steams.
