  • 1 lb (454g) Elbow Macaroni Boiled until soft
  • 1.5 cups (360ml) Mayonnaise Full-fat for best gloss
  • 3 tbsp (45g) Yellow Mustard Provides color and tang
  • 1 tbsp (15ml) Apple Cider Vinegar For acidity
  • 1/2 cup (120g) Pickled Pepperoncini Sliced into rings
  • 1/2 cup (120g) Roasted Red Peppers Diced
  • 1/3 cup (80g) Red Peppadews Chopped
  • 1/4 cup (15g) Fresh Parsley Finely chopped
  • 1 tsp (5g) Coarse Black Pepper Cracked

Equipment

  • 1 Large Stockpot For boiling macaroni
  • 1 Mixing Bowl Stainless steel or glass preferred
  • 1 Whisk For the dressing

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil and cook macaroni until soft. Drain and rinse thoroughly with cold water to remove starch.
Prepare Dressing and Mix
  1. In a large bowl, whisk mayo, mustard, and vinegar until a thick, glossy, pale yellow dressing forms.
  2. Fold in the pepperoncini, roasted red peppers, and peppadews, then stir in the cooled macaroni until fully coated.
  3. Chill for 2 hours. Before serving, garnish with finely chopped parsley and a light sprinkle of coarse black pepper.

Notes

Always rinse the pasta in cold water to ensure the dressing stays glossy.
Use a mix of different pickled peppers for the most complex flavor profile.
