Preparation and Crust
- Preheat oven to 400°F (200°C). Squeeze all moisture out of thawed hashbrowns using a kitchen towel. Toss with oil and salt.
- Press potatoes into muffin cups, forming a crust. Bake for 15 minutes until edges are golden-brown and crispy.
Filling and Final Bake
- Whisk eggs, cream, salt, and pepper in a bowl until frothy. Stir in the diced ham cubes.
- Lower oven to 375°F (190°C). Pour egg mixture into the pre-baked crusts, filling 3/4 full.
- Bake for 12-15 minutes. Top with cheddar and broil for 2 minutes until bubbly with dark brown spots. Garnish with chives.
