Hearty Ground Turkey Sweet Potato Skillet

  • 2 cups Orange Sweet Potatoes Peeled and diced uniformly
  • 1 lb Ground Turkey Lean
  • 1 medium White Onion Diced
  • 1 medium Red Bell Pepper Diced
  • 1 tsp Kosher Salt
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1/2 cup Mozzarella Cheese Shredded
  • 1/2 cup Cheddar Cheese Shredded
  • 2 tbsp Fresh Parsley Chopped
  • 1/2 tsp Cracked Black Pepper Freshly cracked

  • 1 Large Cast-Iron Skillet Essential for searing and caramelizing.
  • 1 Chef's Knife For dicing vegetables uniformly.

Method
 

Cooking Instructions
  1. Heat 1 tbsp (15ml) of olive oil in your rustic black cast iron skillet over medium-high heat. Add the diced orange sweet potatoes in a single layer. Let them cook undisturbed for 4-5 minutes until the bottoms develop a deep golden-brown crust with charred edges. Toss, finish cooking, and set aside.
  2. Lower heat to medium and add the remaining 1 tbsp (15ml) of olive oil. Sauté the diced white onions and diced red bell peppers for 3-4 minutes until softened and translucent.
  3. Push the veggies aside, add the ground turkey to the center, and let it sit for 2 minutes to sear. Break into crumbles, season with salt, garlic powder, and smoked paprika. Stir everything together until the meat is fully cooked.
  4. Fold the caramelized sweet potatoes back into the skillet. Turn off the heat. Scatter the shredded mozzarella and cheddar cheese over the top. Cover with a lid for 2-3 minutes until the cheese is gooey and melted.
  5. Heavily garnish the melted cheese with freshly chopped green parsley flakes and a sprinkle of cracked black pepper. Serve immediately.

Notes

Uniform Dicing: Chop your sweet potatoes to the exact same size to ensure even cooking and prevent mushiness.
