Cooking Instructions
- Heat 1 tbsp (15ml) of olive oil in your rustic black cast iron skillet over medium-high heat. Add the diced orange sweet potatoes in a single layer. Let them cook undisturbed for 4-5 minutes until the bottoms develop a deep golden-brown crust with charred edges. Toss, finish cooking, and set aside.
- Lower heat to medium and add the remaining 1 tbsp (15ml) of olive oil. Sauté the diced white onions and diced red bell peppers for 3-4 minutes until softened and translucent.
- Push the veggies aside, add the ground turkey to the center, and let it sit for 2 minutes to sear. Break into crumbles, season with salt, garlic powder, and smoked paprika. Stir everything together until the meat is fully cooked.
- Fold the caramelized sweet potatoes back into the skillet. Turn off the heat. Scatter the shredded mozzarella and cheddar cheese over the top. Cover with a lid for 2-3 minutes until the cheese is gooey and melted.
- Heavily garnish the melted cheese with freshly chopped green parsley flakes and a sprinkle of cracked black pepper. Serve immediately.
