Ingredients

  • 4 boneless, skinless chicken breasts about 6 oz each
  • 2 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary crushed
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground

Equipment

  • 1 Baking Dish A 9x13 inch dish works well.
  • 1 Meat Thermometer Essential for checking doneness.

Method

  1. Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with a paper towel.
  2. In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, rosemary, salt, and pepper.
  3. Place the chicken in a baking dish and coat each breast evenly with the herb and oil mixture.
  4. Bake for 20-25 minutes, until the chicken's internal temperature reaches 165°F (74°C).
  5. Remove from the oven and let the chicken rest in the dish for 5-10 minutes before slicing and serving.

Notes

Tip 1: For best results, use a meat thermometer to ensure the chicken is cooked through but not overcooked.
Tip 2: Pounding the chicken to an even thickness helps it cook more uniformly.
Tip 3: Store leftovers in an airtight container in the refrigerator for up to 3 days.
