  • 16 oz full-fat cottage cheese Good quality, full-fat is essential for creaminess.
  • 1 cup shredded sharp cheddar cheese Divided.
  • 2 tbsp nutritional yeast
  • 1 tbsp taco seasoning Use your favorite brand.
  • 10 oz diced tomatoes with green chiles Well-drained.
  • 1 tbsp milk or water Optional, as needed for blending.

Method
 

  1. Combine the cottage cheese, 1/2 cup of the shredded cheddar, nutritional yeast, and taco seasoning in a high-speed blender. Blend on high for 60-90 seconds until completely smooth and creamy, scraping down the sides as needed.
  2. Pour the blended mixture into a small saucepan over medium-low heat. Stir in the well-drained diced tomatoes with green chiles and the remaining 1/2 cup of cheddar cheese.
  3. Stir continuously for 3-5 minutes until the cheese is melted and the queso is heated through. Do not boil. Serve immediately.
