Main Ingredients
  • 1 package (17.3 oz / 490g) Frozen Puff Pastry Thawed but cold
  • 1/2 cup (160g) Strawberry Fruit Preserves High quality
  • 1 unit (50g) Large Egg Beaten with 1 tsp water
  • 1 cup (120g) Powdered Sugar Sifted
  • 1-2 tbsp (15-30ml) Heavy Cream Or milk
  • 1/2 tsp (2.5ml) Vanilla Extract

  • 1 Baking Sheet Rimmed
  • 1 Parchment Paper Light brown
  • 1 Pizza Cutter Or sharp knife
  • 1 Piping Bag Or sandwich bag

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with crumpled parchment paper.
  2. Roll out the cold puff pastry sheets and cut each into 6 equal rectangles (12 total).
Assembly
  1. Place 1 tablespoon (20g) of strawberry preserves in the center of 6 rectangles.
  2. Brush edges with egg wash, top with remaining pastry, and crimp firmly with a fork.
  3. Brush tops with egg wash and bake for 15-18 minutes until golden-brown and crispy.
Finishing
  1. Whisk powdered sugar, cream, and vanilla. Drizzle in a zig-zag pattern over cooled strudels.

Notes

Keep puff pastry cold for the best layers.
Do not overfill or the preserves will leak excessively.
