Ingredients
  

The Golden Crust
  • 2 cups Graham Cracker Crumbs 200g
  • 1/2 cup Unsalted Butter 115g, melted
  • 2 tbsp Granulated Sugar 25g
Honey Cream Filling
  • 24 oz Cream Cheese 680g, brick-style, softened
  • 1/2 cup Wildflower Honey 170g
  • 1/2 cup Sour Cream 120ml
  • 3 large Eggs Room temperature
  • 1 tsp Vanilla Extract 5ml
The Topping
  • 1 cup Roasted Pistachios 125g, shelled, whole and chopped
  • 2 tbsp Honey 30ml, for drizzling

Equipment

  • 1 9x9 inch square baking pan Lined with parchment paper
  • 1 Electric Hand Mixer Or stand mixer
  • 1 Food Processor For crust crumbs

Method
 

Preparation
  1. Preheat oven to 325°F (165°C) and line a 9x9 inch pan with parchment paper, leaving an overhang on two sides.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the pan and bake for 10 minutes. Let cool.
The Filling
  1. Beat cream cheese until smooth. Add honey, sour cream, and vanilla, mixing on low speed until combined.
  2. Add eggs one at a time, mixing just until the yellow disappears to maintain a dense texture.
  3. Pour over the crust. Bake for 35-40 minutes until the edges are set. Cool, then chill for 4 hours.
The Finish
  1. Top with a dense layer of roasted pistachios. Drizzle with warmed amber honey before slicing.

Notes

Use room temperature ingredients to prevent lumps in the cheesecake filling.
For clean slices, wipe your knife clean with a warm, damp cloth between every cut.
