- In a small bowl, whisk together the honey, hot sauce, and 1 tbsp of melted butter until smooth.
- In a separate bowl, add the shredded chicken. Pour the hot honey sauce over the top and toss to combine, ensuring all the chicken is evenly coated.
- Lay a tortilla flat. Cover one half with about 1/4 of the cheese, top with 1/4 of the chicken mixture, and then another 1/4 of the cheese. Fold the empty half of the tortilla over the filling.
- Heat 1 tbsp of butter or oil in a large skillet over medium heat. Carefully place the quesadilla in the pan and cook for 3-4 minutes per side, until the tortilla is golden brown and crispy and the cheese has melted.
- Repeat for the remaining quesadillas. Let them rest for a minute before slicing into wedges and serving hot.
Notes
For an extra kick, add a pinch of red pepper flakes to your hot honey sauce.
