Ingredients
  

  • 2 cups cooked shredded chicken A rotisserie chicken is a great time-saver.
  • 1.5 cups shredded cheese blend Monterey Jack and sharp cheddar work well.
  • 4 large flour tortillas Burrito size
  • 2 tbsp butter or oil For cooking
  • 1/4 cup honey
  • 2 tbsp hot sauce e.g., Frank's RedHot or sriracha, adjust to taste.
  • 1 tbsp melted butter

Method
 

  1. In a small bowl, whisk together the honey, hot sauce, and 1 tbsp of melted butter until smooth.
  2. In a separate bowl, add the shredded chicken. Pour the hot honey sauce over the top and toss to combine, ensuring all the chicken is evenly coated.
  3. Lay a tortilla flat. Cover one half with about 1/4 of the cheese, top with 1/4 of the chicken mixture, and then another 1/4 of the cheese. Fold the empty half of the tortilla over the filling.
  4. Heat 1 tbsp of butter or oil in a large skillet over medium heat. Carefully place the quesadilla in the pan and cook for 3-4 minutes per side, until the tortilla is golden brown and crispy and the cheese has melted.
  5. Repeat for the remaining quesadillas. Let them rest for a minute before slicing into wedges and serving hot.

Notes

For an extra kick, add a pinch of red pepper flakes to your hot honey sauce.
Ensure you don't use high heat, as this can cause the honey in the sauce to burn before the cheese is melted.
