  • 1 1/3 cups Warm Water 315ml, 105°F
  • 2 1/4 tsp Active Dry Yeast 7g
  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 2 cups Mozzarella Cheese 225g, low-moisture, shredded
  • 4 oz Pepperoni Rounds 115g, small diameter for curling
  • 1/2 cup Ricotta Cheese 125g, whole milk
  • 3 tbsp Hot Honey 45ml, glossy amber drizzle
  • 1 tbsp Fresh Basil Finely chopped
  • 1 tsp Red Pepper Flakes 2g

Equipment

  • 1 Rectangular Baking Sheet or Pizza Stone Essential for high-heat crust charring.
  • 1 Parchment Paper Prevents sticking and aids transfer to the oven.

Method
 

Dough Preparation
  1. Combine warm water and yeast; let sit for 5 minutes until foamy.
  2. Mix in flour, oil, and salt. Knead for 8-10 minutes. Let rise for 90 minutes until doubled.
Baking the Pizza
  1. Stretch dough into a rectangle on parchment. Add mozzarella and pepperoni.
  2. Bake at 500°F (260°C) for 8-12 minutes until crust is charred and pepperoni is curled.
Finishing
  1. Dollop fresh ricotta onto the hot pizza. Drizzle with hot honey and garnish with basil and red pepper flakes.

Notes

Use bread flour for the best chew and structure.
Add ricotta after baking to maintain the creamy white dollop appearance.
