  • 1 ½ cups Superfine Blanched Almond Flour 168g
  • 5 tbsp Psyllium Husk Powder 45g
  • 2 tsp Baking Powder 10g
  • 1 tsp Sea Salt 6g
  • 3 large Egg Whites approx 90ml
  • 2 tsp Apple Cider Vinegar 10ml
  • 1 cup Boiling Water 240ml
  • 1 tbsp White Sesame Seeds 9g

Method
 

Prepare the Dough
  1. In a large bowl, whisk together almond flour, psyllium husk powder, baking powder, and salt until uniform.
  2. Add egg whites and apple cider vinegar. Begin mixing while slowly pouring in the boiling water.
  3. Beat for 60 seconds until a thick, elastic dough forms and the psyllium is fully hydrated.
Shape and Bake
  1. Divide dough into 4 balls. Shape into 1-inch thick discs on a lined baking sheet with wet hands.
  2. Sprinkle with sesame seeds and bake at 350°F (175°C) for 45-50 minutes until golden-brown and hollow-sounding.
  3. Transfer to a wire rack and cool for 30 minutes to set the airy internal crumb.

Notes

Always use a digital scale for psyllium husk to ensure the texture isn't too gummy.
Ensure the water is at a rolling boil to properly activate the fibers.
