  • 1 cup full-fat cottage cheese Small curd works best.
  • 2 large eggs
  • 1/4 cup almond flour Fine, blanched.
  • 2 tbsp psyllium husk powder Ensure it is powder, not whole husks.
  • 1/2 tsp salt Optional, to taste.
  • 1/4 tsp garlic powder Optional, for flavor.

Method
 

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Combine the cottage cheese and eggs in a high-speed blender. Blend until completely smooth, about 30-45 seconds.
  3. Add the almond flour, psyllium husk powder, salt, and garlic powder (if using) to the blender. Pulse until just combined.
  4. Pour the batter onto the prepared baking sheet and use a spatula to spread it into a thin, even rectangle (about 10x12 inches).
  5. Bake for 20-25 minutes, until the top is dry and the edges are golden brown. For a firmer texture, flip and bake for an additional 5 minutes.
  6. Let the flatbread cool on the baking sheet for at least 10 minutes before slicing and serving.
