  • 1 lb (450g) Smoked Sausage Sliced into rounds
  • 1.5 cups (300g) Long-Grain White Rice Rinsed
  • 1 can (15 oz / 425g) Black Beans Rinsed and drained
  • 1 large Red Bell Pepper Chopped
  • 1 medium Yellow Onion Diced
  • 3 cups (720ml) Chicken Broth Low-sodium
  • 2 tbsp (30ml) Olive Oil Divided
  • 1/4 cup (10g) Fresh Cilantro Chopped for garnish
  • 2 stalks Green Onions Sliced into thin rings

Equipment

  • 1 12-inch Skillet with Lid Heavy-bottomed cast iron or stainless steel preferred.
  • 1 Fine Mesh Strainer For rinsing rice and beans.

Method
 

Sear the Sausage
  1. Heat 1 tbsp olive oil in a skillet over medium-high heat. Add sausage rounds and sear until dark brown, charred edges form (about 3 minutes per side). Remove from pan.
Sauté Aromatics
  1. Add remaining oil to the same skillet. Sauté yellow onions and red bell peppers for 5-6 minutes until onions are translucent and peppers are softened.
Simmer Rice and Beans
  1. Stir in the rice to toast for 1 minute. Add black beans and chicken broth. Bring to a boil, cover with a tight lid, and simmer on low for 18-20 minutes.
Final Steam and Garnish
  1. Remove from heat and let sit covered for 5 minutes. Fluff with a fork, stir the sausage back in, and garnish with cilantro and raw green onions.

Notes

Rinse the rice thoroughly to remove excess starch for the fluffiest results.
Don't lift the lid during the simmering process or you will lose essential steam.
