One-Pot Chicken Sausage Orzo with Creamy Broccoli and Parmesan

Ingredients
  

Primary Ingredients
  • 1 tbsp Olive Oil Extra virgin
  • 12 oz Chicken Sausage Pre-cooked, sliced thick on a diagonal
  • 1.5 cups Orzo Pasta Dry, unrinsed
  • 3.5 cups Chicken Stock Low-sodium
  • 3 cups Broccoli Florets Bite-sized
  • 0.5 cups Parmesan Cheese Finely grated
  • 1 tsp Black Pepper Freshly cracked
  • 0.5 tsp Red Pepper Flakes

Equipment

  • 1 Heavy-bottomed skillet or Dutch oven Ensure it has a tight-fitting lid.
  • 1 Chef's Knife For diagonal sausage slicing.

Method
 

Cooking Process
  1. Heat oil in a skillet over medium-high. Sear sausage slices for 3-4 minutes per side until caramelized brown edges form. Remove and set aside.
  2. Sauté onion and garlic in the same pan. Add dry orzo and toast for 2 minutes until fragrant and slightly golden.
  3. Add chicken stock. Bring to a boil, then reduce to a low simmer, cover, and cook for 8-10 minutes.
  4. Return sausage to the pan and place broccoli on top. Cover and steam for 3-4 minutes until broccoli is bright green.
  5. Stir in half the parmesan. Serve in bowls topped with remaining cheese, cracked black pepper, and red pepper flakes.

Notes

To keep broccoli bright green, do not add it until the last 3-4 minutes.
Scrape the bottom of the pan after searing sausage to incorporate all the flavor into the broth.
