  • 36 cookies Chocolate Sandwich Cookies approx 14.3 oz (405g)
  • 6 tbsp Unsalted Butter 85g, melted
  • 16 oz Cream Cheese 450g, softened
  • 1.5 cups Powdered Sugar 180g
  • 16 oz Whipped Topping 450g, divided
  • 2 cups Fresh Strawberries 300g, diced
  • 2 cups Fresh Blueberries 300g
  • 2 tbsp Cornstarch 16g, divided
  • 1 tbsp Lemon Juice 15ml, divided
  • 2 tbsp Star Sprinkles Red and blue sugar stars

Equipment

  • 1 9x13 Glass Baking Dish Clear glass is essential for visual layers.
  • 1 Food Processor For crushing cookies.
  • 1 Hand Mixer To whip cream cheese layer.

Method
 

Prepare the Layers
  1. Pulse cookies in a food processor until fine. Mix with melted butter and press firmly into the bottom of a 9x13 glass dish. Freeze for 15 minutes.
  2. Beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread half of this mixture over the crust.
  3. Simmer strawberries, half the lemon juice, and 1 tbsp cornstarch slurry until thickened. Cool completely and spread over the cream layer.
  4. Spread the remaining cream cheese mixture over the strawberries. Simmer blueberries with remaining lemon juice and cornstarch until thickened. Cool and spread as the final fruit layer.
  5. Pipe swirls of remaining whipped topping over the blueberries. Garnish with star sprinkles and refrigerate for 4 hours before serving.

Notes

Wipe the knife clean between cuts for perfect layers.
Ensure fruit fillings are completely cool before adding to prevent melting the cream.
