Prepare the Layers
- Pulse cookies in a food processor until fine. Mix with melted butter and press firmly into the bottom of a 9x13 glass dish. Freeze for 15 minutes.
- Beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread half of this mixture over the crust.
- Simmer strawberries, half the lemon juice, and 1 tbsp cornstarch slurry until thickened. Cool completely and spread over the cream layer.
- Spread the remaining cream cheese mixture over the strawberries. Simmer blueberries with remaining lemon juice and cornstarch until thickened. Cool and spread as the final fruit layer.
- Pipe swirls of remaining whipped topping over the blueberries. Garnish with star sprinkles and refrigerate for 4 hours before serving.

Wipe the knife clean between cuts for perfect layers.
