  • 1 lb (450g) Rectangular Focaccia Bread Pre-baked or fresh
  • 1 lb (450g) Ground Beef 80/20 lean-to-fat ratio
  • 2 large (500g) Yellow Onions Thinly sliced
  • 1.5 cups (170g) Mozzarella Cheese Shredded
  • 1 cup (115g) Sharp Yellow Cheddar Shredded
  • 1/2 cup (120ml) Mayonnaise For the sauce
  • 1/4 cup (60ml) Ketchup For the sauce
  • 2 tbsp (30ml) Olive Oil For crust sheen

  • 1 Cast Iron Skillet Used for searing beef and onions
  • 1 Rimmed Baking Sheet To bake the focaccia pizza

Method
 

Prepare the Components
  1. Cook sliced onions in butter over medium-low heat for 25 minutes until translucent and golden-brown.
  2. Brown the beef in a skillet over medium-high heat until small, well-seared crumbles form; drain fat.
  3. Whisk mayonnaise and ketchup until a light-orange tangy sauce forms.
Assemble and Bake
  1. Spread sauce over the focaccia, then layer with beef, onions, and both cheeses.
  2. Bake at 425°F (220°C) for 10-12 minutes until cheese is bubbling with toasted brown spots.

Notes

Use freshly grated cheese for better melting.
Don't skip the caramelized onions, as they provide the classic patty melt sweetness.
